Cultures come together in Italy, particularly in Sicily: Roman, Arab, Byzantine and Norman, each with its own personal touch. The panoply of flavors is multiplied tenfold, as are the good deals in the region. We will start our tour of Italian cuisine with pasta. Pasta alla norma is a combination of pasta, eggplant, grated cheese and tomato sauce. Once you’ve finished your pasta alla norma dish, you can tackle the Sicilian rice dumplings known as arancini. Rich in flavour, aracini are flavoured with saffron and filled with cooked meat, peas and mozzarella. You cook the whole thing in thick tomato sauce from local producers. Be careful not to add too much saffron, as it causes uncontrolled laughter!
Sicilian gastronomy is a journey in itself. The main ingredients of Sicilian cuisine all have their own identity, so try Sicilian Cannoli, a sweet you’ll be hooked on in no time! Cannolo means a small tube of fried dough crust about ten centimeters long. About 5 centimeters wide, it’s filled with a sweet cream filling, often ricotta-based. Sicily is the home of marzipan, so discover Frutta di Martorana, the local marzipan that is made with great care on November 2 in honor of the departed. To round things off, try a Sicilian dessert that encompasses all the ingredients: Cassata. A cake made with candied fruit, cookie, icing and fresh ricotta cheese. The Arabs added lemon, sugar and bitter oranges, while the Normans added marzipan. Since 1808, the Carnavale di Ivrea, originating in the province of Turin, has been the only festival authorized by Napoleon. Diverted to Sicily, you will have the opportunity to indulge in a blood orange battle on mardi gras. You will find that Italians have a big heart, and they will cook for you whenever they can, drowning you in juicy anecdotes.
Potatoes à la Sicilienne are a real treat. The recipe is very simple: you need a kilogram of potatoes, a clove of garlic, an onion, pepper and, of course, olive oil. Sicilian culinary specialities don’t stop at pasta alla siciliana, but dried fruit and prickly pear are also in the pantheon of culinary gems. This highly exotic fruit comes directly from the Arab invasions, along with bitter oranges. With the same climate as Tunisia and Turkey, fruit from the various Mediterranean trading posts has no problem making Sicily its home. Around Palermo, you’ll find Sfincione, a pizza unlike any other: spongy, it will surprise you with its authenticity and cooking.
Inherited from the green pastures of the island, you can taste the marvellous sheep’s milk in yoghurt form or hot off the grill on a farm visit. Vineyards are gods in the Mediterranean. Originating in present-day Georgia and Armenia, the Hellenes worship Dionysus and the Romans Bacchus. Enter one of the many enotecas and raise a glass to the great history of this red and white elixir. The highlight of the show is exploring Syracuse‘s olive groves, where the surrounding land and sea would provide the most romantic inspiration for a watercolor painter. Enjoy Taormina‘s finest views for unparalleled refreshment. Enjoy a lemon granita, pure ice crushed and flavored with a whole lemon. Serve with Panelle, a fried chickpea flour doughnut. One last dish for the road? Macco di Fave is a thick bean soup that can be enjoyed at home or in a restaurant. Of course, you can add olive oil and pepper, as well as tomato sauce!
